This will be my first post. I must confess i am a little bit nervous. Why? Because I decided to blog in english and yes: english is a foreign language for me. So why do I blog in english? It’s just because that I can reach more people (my cousins who live in Australia for example :-)). I hope you will enjoy my blog, my recipes and the way i write.
Now I want to welcome you to my blog, to my world. And I think there is no better way to welcome somebody than with cake: little buttery and flaky french tartlets filled with blackberry jam (of course you can use any jam or marmelade you like) an topped with almond streusel.
Jam Streusel Tartlets
3 Tartlets
Ingredients
pie crust:
- 55 g cold butter, cubed
- 62 g all purpose flour
- 15 g icing sugar
- 1 tbsp. ice water
- 1 pinch of salt
almond streusel:
- 20 g all purpose flour
- 20 g caster sugar
- 10 g chopped almonds
- 10 g cold butter
filling:
- jam, marmelade or curd
Instructions
- Whisk flour with salt and icing sugar.
- Add butter and with a mixer or food processor mix all together until you have a cumbly mixture.
- Add slowy the water to the mixture and work it together until you have a smooth dough.
- Shape the dough into a ball, wrap in plastic wrap and let rest in the fridge for at least one hour.
- Preheat oven to 180° C.
- Cut some baking paper into stripes. Put two stripes crosswise in a tartlet pan.
- Flour you work surface lightly and roll out dough to (approx) 2-mm thickness. Cut out 3 rounds (12 cm). Rerolling scraps if necessary.
- Place one round into one tartlet pans and press into it well.
- Put back in the fridge to rest for another 30 minutes.
- Meanwhile whisk flour, almonds and caster sugar together.
- Add butter and by using your hands rub in butter until clumps form. Set aside.
- Put 1-2 tsp jam into each pastry and top with streusel.
- Bake for about 25-30 minutes or until the pasty become golden and the filling is bubbly.
- Dust with icing sugar if you like.
