Banana Chocolate Chip Muffins

People who know me in real life (or follow me on Instagram), probably know I have a weakness for bananas, which are for most people unspectacular fruits. Because I love to have sweet breakfast, it happens very often, that I mix my daily oats with a mashed banana or add banana slices on top. Bananas give some sweetness without adding refined sugar, what means I feel less guilty 🙂 But whenever I don’t care about calories or sugar in the morning, I love to grab a slice of sweet bread or muffin and have it with a big mug with steaming coffee for breakfast. Seriously, who would have thought it, that my favorites are those, which contain bananas (but we all know, we should rather call those baked goods banana cake) 😉

Banana Chocolate Chip Muffins

These banana chocolate chip muffins are sweet, soft and moist and can also be eaten for snack or afternoon tea. Furthermore baking them is a good opportuntiy to use, as it was in my case, all the leftover chocolate Santas, which we recieved for christmas and nobody wants to eat anymore.

12 Muffins
Ingredients
  • 120 g all purpose flour
  • 120 g chocolate chips or chunks (semi-sweet or milk chocolate)
  • 60 g caster sugar
  • 60 g light brown sugar
  • 60 g vegetable oil
  • 60 g ground almonds
  • 1½ tsp. baking powder
  • 2 bananas
  • 1 egg
  • 1 pinch of salt
Instructions
  1. Preheat the oven to 180° C.
  2. In a large bowl, mix all dry ingredients together.
  3. Mashed bananas with fork on a plate.
  4. Mix mashed bananas with oil and egg.
  5. Pour the banana mixture into the dry mixture and whisk to combine.
  6. Stir in chococlate chips/chunks.
  7. Line a muffin baking tray (for 12 muffins) with paper muffin cups.
  8. Fill the batter equally into the muffin cups.
  9. Sprinkle with some caster sugar, if you like.
  10. Bake for about 20 minutes.
  11. Transfer muffins to cooling rack and let cool down.
