Chocolate Granola Cups

As a real foodie I love to cook and bake for myself because I really love to eat. Of course we also go out for dinner or even eat fast food from time to time especially when we are on the road. And needless to say I would never refuse a invitation for dinner or lunch of a friend and there is almost nothing better than eating at mum’s. But I have to say I love it more to host. And since we have a little daughter I rather invite for brunch than for dinner, because most of our friends have kids at the same age. So the kids can play with each other without becoming grumpy too quickly and we parents have enough time to talk each other calmly. If you have your own little family you know how time flies and suddenly there are another weeks or evens months which have passed.

I always search for some ideas for a cozy brunch on a weekend. And these cute little granola cups are perfect for a brunch table. Because of the chocolate layer inside they can be filled beforehand without becoming drenched. Berries and cherries are perfect for topping in summer but if they are not in season anymore just use other fruits. And if you want to save the effort of forming the cups, multiply the ingredients (except the extra chocolate for the chocolate cover) and just bake yourself an amazing chocolately granola for everyday’s breakfast.

Ingredients
for the granola cups:
  • 150 g rolled oats
  • 30 g coconut or raw cane sugar
  • 30 g coconut oil or butter + extra for greasing
  • 30 g broken flax seeds
  • 30 g ground almonds
  • 30 g dark chocolate (at least 70%)
  • 2 tbsp. water
for the chocolate layer:
  • 60 g chocolate of your choice
for serving:
  • 1-2 tbsp. greek yoghurt per cup
  • fruits of your choice
  • 1 pinch of salt
Instructions
  1. Preheat oven to 180°C.
  2. Grease 10 moulds of a muffin tin with melted butter or coconut oil.
  3. In a pot, heat dark chocolate, sugar, butter or coconut oil and water over low heat cocolate and butter or coconut oil is melted.
  4. Mix it with oats, flax seeds, ground almonds and salt.
  5. Press about 2 tbsp. of the mixture into the base and up the sides of a muffin mould.
  6. Bake for about 15-20 minutes.
  7. Let cool down for at least 20 minutes and then unmould carefully.
  8. Melt 60 g chocolate and with a brush cover the inside of the granola cups with melted chocolate evenly. Let cool down until chocolate cover is firm.
  9. Fill with 1-2 tbsp. greek yogurt and top with fresh fruits.
