Maple Walnut Granola
4-6 servings
  • 2 cups rolled oats
  • 1 cup walnuts, roughly chopped
  • ½ cup grated coconut
  • ⅔ cup broken flaxseeds
  • 4 tbs. maple syrup
  • 3 tbs. virgin coconut oil
  • 3 tbs. chia seeds
  • 1 ts ground cinnamon
  • 1 pinch of salt
  1. Preheat oven to 170°C (fan forced).
  2. In an large bowl, mix oats, walnuts, flaxseeds and grated coconut together.
  3. Melt the coconut oil over low heat. Add maple syrup and ground cinnamon and stir to combine.
  4. Combine wet and dry mixtures well.
  5. Spread the granola out evenly on the baking tray and bake about 30-35 minutes, stir every 10 minutes.
  6. Take out of the oven and let cool down.
  7. When cooled add chia seeds and mix.
  8. Store in an airtight container.
