Apple Hand Pies
18-20 Hand Pies
pie crust:
  • 70 g cold butter, cubed
  • 140g all purpose flour
  • 45 g icing sugar
  • 2-3 tbsp. cold milk
  • 1 small apple
  • 10 g icing sugar
  • 1 tsp. corn starch
  • ½ tsp. ground cinnamon
  • 2 tsp. freshly squeezed lemon juice
  • 1 small egg, for egg wash
  • some granulated sugar, for sprinkling
  1. Whisk flour with salt and icing sugar.
  2. Add butter and with a mixer or food processor mix all together until you have a cumbly mixture.
  3. Add slowy the water to the mixture and work it together until you have a smooth dough.
  4. Shape the dough into a ball, wrap in plastic wrap and let rest in the fridge for at least one hour.
  5. Preheat oven to 190° C.
  6. Peel apple and cut into small cubes.
  7. In a bowl, combine apples, icing sugar, ground cinnamon, corn starch and lemon juice.
  8. Flour you work surface lightly and roll out dough to (approx) 1-2 mm thickness. Cut out rounds (4-6 cm). Rerolling scraps if necessary.
  9. Line a baking sheet with baking paper.
  10. Cut half of the circles crosswise.
  11. Top the other half of the circles with about ½-1 tablespoon of apple mixture and with the crosswise cutted circles.
  12. Press together the edges by using a folk.
  13. Whisk egg well.
  14. Lightly brush the hand pies with egg wash and sprinkle some granulated sugar.
  15. Bake for about 18-20 minutes.
