As I maybe have already mentioned I am not a kind of low carb girl. But as someone who is really interested in all kind food I have heard of those low carb flours which are made from nuts like (de-oiled) almond or coconut flour. And as a food blogger who is naturally curious and always happy to try out new things I have to buy some (okay it is a little more than “some”… actuatally I bought 1 kg!!!) coconut flour. Amittedly I have already heard baking with coconut flour requires a lot liquids. But I was still surprised how much liquids coconut flour absorbs. So if you experiment with coconut flour it’s can be very recommandable to allow the batter to rest for about 5-10 minutes, then you can see if your batter needs more liquid or not (the batter should have the same texture as you know from “normal” batter).
The first time I heard about that salt and sweet combo in desserts or sweets was in the 90’s sitcom “Friends” when Ross offers Phoebe a salt water taffy. Her reaction was “What the mother of crab is up with this stuff??? Oh god, is it a gum, food? What is the deal??? Oh, that’s nice… May I try the pink one?” And I was just thinking “Salt water what??? Taffy? Salty candies??? Ehhh!”. But on the other side, I was fascinated and it made me that curious that this scene stuck in my head over years. I mean I am talking about a sitcom from the 90’s and I still remember that scene! But unfortunately I never had the possibilty to try of that salt water taffy here in Germany.
From no-breakfast to breakfast-addicted – this is how you can call my story. And such breakfast like this one has contributed to make me think on breakfast first once I wake up. But let’s be honest, chocolate and salted caramel sound more like a dessert than the first meal of the day, right? And who can say “no” to chocolate, salted caramel or dessert? Yeah, I guess nobody. Dessert for breakfast sounds to good be true? Believe me, these overnight oats variation is one of my favorite with very good reason. It’s creamy, not to sweet, chocolaty and topped with the best sweet treat ever: salted caramel sauce. So it will not only fills your stomach (and keeps you full until lunch), but also your soul (you know, chocolate is always for the youl, too :-))
During the last few days I spent every free minute working on the blog layout and new logo. And I tell you I am a complete beginner at all that web stuff and have no idea about graphic design. Maybe you can imagine how much efford it took. But on the other side i am a little bit proud of myself, because before i start this new little project (an own blog) i could not believe that i can manage all those things by myself. Well, I was a little bit concerned about missing the right moment for posting the recipe for these fluffy and airy dessert (or cake?) named Pavlova. Because it’s allready September, Autumn is just ahead and meringue, peaches and yogurt somehow sounds summery, doesn’t it?
